During spring time there is a sense of rejuvenation, motivation and inspiration in the air. The weather is warmer, the birds are happy and tons of beautiful vegetables are in season. I personally love watching people manifest their passion into prosperity and with spring in the air, I see a lot of that going on. As I have said before, a major perk of running my website is finding out about amazing vegans around the world making real change. The people featured on veganconsultant.com are handpicked because of their great work. Here is my list of 12 vegans who are springing into action this spring!
1. Vegan Chef Mayra – Chef
She is currently working on opening the FIRST 100% vegan restaurant in Las Vegas, NV. Pura Vida Bakery & Bystro By Chef Mayra™ is set to open in July, 2011. Founder of Rose Pedals Vegan Weddings, helping couples around the country make their special day be in line with your morals and values. 3. Kim Garr – Baker
Founded C’est La V Bakeshop, selling her elegent vegan treats online. In addition to creating lovely treats, Kim will be starting C’est La Vegan cooking classes to help people make their own vegan delights. Kim was recently featured on the Food Networks’ Cupcake Wars. 4. Kimberly Snyder – Health & Beauty Expert

5. Our Hen House –Animal Rights Organization
Their mission is to effectively mainstream the movement to end the exploitation of animals and they are doing just that. I have tasted vegan cupcakes from the East Village to Hollywood and JAM Vegan Bakery really stands out!
