Making my ‘midnight snack’ a raw, organic veggie wrap. It’s the healthiest option I can find at this hour. It had carrot, beet, spinach, walnut patte wrapped in collard green. It came pre-made so I don’t have the recipe but it would be easy to make. Delicious and light to eat! : )

Eggplant in garlic sauce at Happy Buddha Vegetarian Restaurant in Flushing, Queens. SO GOOOOD!!! It reminds me of a dish I use to eat when I lived in Chengdu, China only that dish used fish oil. Now I found a vegan alternative that is outstanding. I am a happy girl ; )
